It's neither a mac thing or a version thing, as the message says the material needs to be used before you can edit it. What it really means is you can edit materials that are in the model, not materials that are waiting to be put in the model. So apply a material, then go to the In model tab (however that works on mac) and edit the material you find there.

@Rich-O-Brien thank you for this useful and correct advice for most people. We, on the other hand, are decentralised across Europe and many other countries and do not share a common server drives at the moment. Another very important point is that various material pallets relate to specific product lines which may only be used in certain countries. This allows me to better delegate responsibility, maintenance and fine tuning for use to the users themselves...

@Rich-O-Brien It doesn't seem to recognize that command, not pasting anything that way. Trade off, since I am already setting everything up as a dynamic component, I can add descriptions there, copy and paste into that, then copy and paste from that into the menu and it works fine. at least that saves the external notepad. In anycase, the description also doesn't show up until you click on the component in the menu like you're going to insert it in the model, then it shows up just fine.

I had no idea what this is until I did a search for it.
