Wondering is there would be a way to create a ruby that could take a model or a selection of faces and turn all polys into quads? This would really help me for one to create smooth lower poly meshes.

Problems with texturing such curved (or irregular) surfaces have been discussed several times already, like here for example.
Apart from texture projecting or wrapping, you might want to consider Dale's UVTools 2: http://forums.sketchucation.com/viewtopic.php?t=23725
His SDS2 plugin - which isnΒ΄t available yet - is coming with a new feature - Paint Brush.
Also posting a screenshot or a model itself would be a good idea.
Note that these 3D trees work perfectly (without poly reducing) in Kerkythea or Thea. You will need to adjust the materials though but than after saving, they are just fine.
You could only do so if all its parts were valid, solid groups/components, too. When this tool came out, I tried with a couple of my models and they all failed. π
