Making realistic terrain

I need to make some terrain, just a garden but I want to make it look more natural. Any tips or "How to's"?

I'm using SU on a apple imac, I only seem to have the options - smoove, stamp, drape, add detail and flip edge. I don't have the from scratch option Rich talks about.

The toolbar has all the buttons.
In the menus the functions are split between the Draw and Tools menu,
