Gaius' approach works, but the confusion is because although the image is replaced, and is correct for your model, the "match photo" setup lines (green and red vanishing lines and axes) in the new Photo Match are no longer where they should be (although the origin, vanishing points and horizon line are correct). That's unsettling, but doesn't really matter because your model should already be set up properly. Just DON'T EDIT the setup lines in the new Photo Match!

RE: Photo Match: how to scale model and camera?
Dave's is the only response that actually deals with the question. The problem is the distinction between scaling the model (changing it's relative size) to match the photo (which is accomplished by sliding along the blue [or other] axis) and changing the scale of the model so that what you've created in SketchUp can be "to scale" (actually have a door be 3'x7').

RE: Inserting 2D graphics
Thanks! The plans are 30"x15". I was saving them as "highest quality" (I don't know what actual resolution that turned out to be), which was probably overkill. I reduced the resolution when initially importing the PDF in Photoshop from 200 ppi to 100. (The default 72 ppi still left things a little grainy) and saved as a PNG. One or the other (or both) took care of the problem. The resulting PNG file is only 500K and inserts into LayOut just fine.

RE: Font changes when editing text
It's a .PFM font, which I think came originally through Adobe. It appears on my list of available Text Styles in Layout - but that list must just be generated from whatever fonts I have in C:\Windows\Fonts?

Inserting 2D graphics
When inserting some jpg files, I get an "Insertion Failed" message which reads, "Not all of the specified content files could be inserted." Other jpgs I am able to either insert or drag over from Explorer, but these I can't. I'm starting with dwg files in ACAD, distilling them as pdfs and then saving them as jpgs using Photoshop. Not an elegant solution, I realize, but I'd like to include my plans along with the SU scenes in LayOut. The jpgs aren't particularly big - around 6M.
Any sugegstions?

Font changes when editing text
When I change text styles, the changes "take effect" while the text is highlighted, but when I exit the text box, the text style / font changes to some unidentified generic style. Currently this is occuring when I try to use "Eras Ultra", but I know it has happened with other text styles also. Perhaps this is just a screen text issue, but it makes it difficult to "layout" text if it isn't WYSIWYG.
I've plotted the file twice. Once it plotted with the "correct" type style, and the second time it plotted with the "generic" type style.
