      I looked and looked and could not find it. I wish for paint sample (not paint bucket) shortcut, so I could assign to my keyboard. Actually I wish for every function in palettes toolbar we were able to assign a keyboard shortcut.

        B is the default keyboard shortcut for the Paint Bucket, then hold Alt (or Command on Mac) to get the eye dropper to sample a material. Release Alt (Command) to go back to the bucket. It's very fast to sample and apply different materials that way.

                For native tools, the shortcuts are listed on the reference card (togehter with all combinations, for paintbucket e.g. shift, ctrl, shift+ctrl, alt), this is helpful for learning them...
