Just curious Rich. How do you know how to split model(divide) and do you model half as component before combining and subdivision?
Did you use a plugin for texturing? (i.e FredoΒ΄s Thrupaint)

I began with the cow/bull horns and decided on 8 segments for the profile. This meant I had some idea of the volume needed to create the head portion. I did only model half and mirror it. But because the photo was not completely straight I exploded the geometry and tweaked the mirrored side to match the photo.

It was more point to point modelling than box modelling.

No, just projection of your photo. I did use Texture > Position on areas where needed. But 90% is projection.
