Can one show edges in some objects and not in others? Or is it all or nothing using View/Edge Style/Edges?

You can use a tool - like thomthom's Selection Tools - to select just the object's edges and then use the context-menu 'Hide' on them ?
If Hidden Geometry is OFF then they are not visible...

The manual way is to use the Eraser tool with Shift to hide the edges.

If you don't want to hide the edges in the model, you could create the same effect easily by combining image exports.
