3 QUESTIONS

1- Whatcauses things to go away without knowingly deleting them somehow. See Image!
2-Things were fine but now when I zoom in things get cut open. See Image!
3- I have a scene that I set up shadows for and saved. Later I change the date etc.and save again but when I come back in everything is back to original date etc.

Is your geometry very far from the ORIGIN [0,0,0] ?
If so - then after ensuring that all layers are 'on' and nothing is hidden or locked - move everything over... Remake your views and retry...
OR
Check that your GPU driver is up to date...
AND/OR
Try with different OpenGL settings in Preferences...

Problem number 2 depends on how the camera works in 3d software. Generally speaking, when I see the plane cutting, I do a Zoom Extents and the camera resets.
Problem 1 and 3 I think depend on view settings: when you save a view it remembers which objects you have hidden and also time and date for shadow settings. So if you click on one of the view tabs, this has to be taken into account!

When you say "and save again," do you mean you are hitting the Save icon or File>Save? If so, that is not what you need to do to make the new time/date be active for the scene. You need to Update the scene. You can do this by right clicking on the scene tab and then choosing Update or you can click the Update button in the Scenes dialog box. See Window>Scenes. The Update button is a pair of circular arrows at the top of the dialog box.

2 is definitely clipping as it was diagnosed by others above. Read more about it here:

1 I have no clue - should see the file for it I guess. May be an object on some hidden layer...

Thanks for the feedback. I looked at all, as best I can, but do not find anything wrong. Everything had been working fine then all of a sudden things changed. FORTUNATELY, I had a backup and upon restore all was fixed and no further problems currently exist.

I tried “zoom extends but it did not solve my problem by itself but in conjunction with what Gaieus said read the solution is there.

As always, thanks a lot! In regards to #1 I think I did something and I have no idea what it could have been and I cannot find the specific cause. I think you identified the probable cause. Restore from backup solved the problem.
