I'm sure I've read on the forums for a way to do a vaulted ceiling (like that picture) but can't for the life of me find it! ....

Leeteedee, although TIG is right, I'm going to just say, the arch is all done with circles, and lines.
experiment of course! (like breaking up your lines, and trying circles from different points).
