Your problems with smoothing the surface/lines is not unknown to me. The only thing I can say on that subject: don't give up and try, try and try again. A 'bit' of patience is the only must have
Did you tried the e-books from Elisei?
They help a great deal and brings alot of light in de darkened world of car-/organic modeling

If so: I don't
I build it all in the 'simple' style and SS it from time to time to check the progress and results and then undo (ctrl-z is your best friend )it.
Before EVERY SS action I save my file (save copy as...), cause you never now if SU may crash or not
I also make a variety of files with different functions, so they don't bite eachother. I.e. a file for building in simple meshes, a file for the SS'd parts and a file for the SS'd parts wich need altering like lowering/tilting/painting.

Every line you want to become/stay an edge after SS, you dubbelline it
See pic below and look carefully at the edge from the cover and you'll see it's dubbellined.
The closer the two lines are together, the sharper the edge will be.
