Hi Chris,
I am not really sure what you wish - so just went ahead and did what I thought. Please, let me know if I guessed at least partly well.

Would this be a slanting path (with those numbers as heights)?

yeah ... exacty

You could build the path (with its variwed elevations) as a straight one then draw the curved line and use Chris Fullmer's Shape Bender Plugin to bend the path to the curve. Wherever it incidentally goes into the walls, you could simply intersect and delete the unwanted part.
-
If you have the four 'sides' of each piece of path - two ends and two side 'rails' - you could use ExtrudeEdgesByRailsV2 to form the paths, and as long as those four bits are all Curves [Weld them if not] then it will make a proper triangulated mesh that will fill in between them.
You can make the long 'rails' by intersecting the walls with a tilted plane. The ends don't need to be 'flat' on this plane to match them, with EEbyRails it will make the mesh to suit whatever... -
great answer TIG
