Old folders

Despite uninstalling old versions of SU, there still remains 500mb worth of folders in c / users / appdata / roaming / sketchup . Is it safe to delete them?

You probably have old paths set up for the older versions - typically these will be your personal subfolders for each version, containing some of the following.
Classifications
Components
Gems64
Materials
Plugins
Styles
Templates
TutorialsIf you never use any of these files, then deleting some of them [or the whole subfolder] is likely to be OK...
Check that your current setup's equivalent subfolders contain what you'd expect - there's probably much duplication... -
OK - I am not a big subfolders guy - but I do have some. I need to trash these folders because i am running out of storage and I hesitate to install my new 1TB M2 SSD because it may cause a disruption in current workflow. (because nothing ever goes smoothly)

for my roaming content (plugins) i make sure i copy them over to the newest directory, and for my components, materials etc i copy them over to the newest program data folders.
update my preferences -> files
open SU verify the plugins etc are all working, then i mark the second oldest top level folder as "SketchUp 2020.X" in case i missed something, and remove the older ones.
