Set default document/printer settings?

Every time I restart SU the printer settings return to 8.5x11 letter in portrait. I almost universally print 11x17 in landscape. I made the change in my template, but it does not hold once I restart SU. Is there a way to set this as the default in SU, or must this be done in in the printer driver?
