Adding text
-
I see that there is a 3D Text button and I can use it to add text in 3D. It also looks like you cannot edit the text once you've placed it (i.e. for typo's). You have to redo the text from scratch. I think I can move, scale, and rotate the text though. Do I have that understood correctly?
There also is another Text button but I don't know how that works or what I can do with it.

Basically, you are correct on the 3d text. Actually, it is created as a component. The only editing you can do is modify the geometry within.
There is a plugin by Thomthom called "Editable 3D Text." When/if you are ready for plugins, you might look into it.
The other text is 2d text and its positioning is dependent on the view or camera position at which it is created. If you zoom or orbit, the text loses its context. So, in order for it to be effective you should save the view as a named Scene.
