I used the headlight shape from the original model to create this one, it's the same platform. Also used parts from the new Audi A3 at the bumper. Nose edge is made from scratch. Then I modeled everything from ground up using pictures.

How to do it?I do it manually. If you mean separating components, I usually explode the whole mesh (in the RS5 case) and deleted meshes that connected the door with the rest of the body, then reconstructed it. Also you can do it using the smooth command to unsmooth faces, after that it shows you the reference line and you can unite the faces in a component. When you get a blank model you need to make it all clean from scratch. It has every part connected since many models are imported from games, not edited, just imported and saved as .3ds, .c4d, .max files.
