      Hi,
I’m trying to position a projected jpeg image on to the inside of a sink bowl, how is it possible to adjust the image position after it’s been projected? Or is there a way to make sure that I project the image correctly in the first place if so how? (Image will not center and makes a collage effect).

Always draw a simple face where you can position your image first. If it is a sink, group your sink, go to top view mode and parallel projection. Now draw a rectangle above your sink (it is enough if the sink perimeters just touch the rectangle edges), position the image accurately and when finished, make it projected. Still on that single face.

Now edit the group (the face - outside the group - will still be visible but faint a bit). Select the Paint tool and hold down the Alt key (it will turn into a sampler tool), sample the projected image from that simple face outside the group, release the alt key and now apply the material onto your sink.

You can't shift the material on the inside of the sink bowl (multiple faces) as you can on a single face so using Csaba's recommendation is the way to go about it. If, after applying the projected material, you find you still need to adjust its position, reposition it on the horizontal face above the sink and then resample and reapply.

Sometimes it is good to position the material on that flat face just a little bit bigger so that you do not have issues around the edges.
