We recently changed servers at the office and the server name has changed which gives me an license error? How can I fix this? The error reads: "The server.dat specifies a sketchup license file that does not exist or is currently unaccesible...."

Have you re-activated the SU license on the new server?

How do I reactivate? I try and update the lic within Su, however the option is greyed out.

OK, I think I've found some info.
- Make sure that all SU instances on your network run the current (latest) version of SU
- Then go to this page and check out if anything applies to you.
- But most probably this is your solution.
