Best way to white balance?

The Auto doesn't seem to really work (at least in the scene I'm working on).
Is the ONLY option to use the color picker? You can't set the white balance based off of a color temperature? You can't select a color from your VFB as the basis of the white balance?
Am I missing anything here?

Put a white (lightness value of 220-240) sphere in your scene. Render this area with lowered settings. Take a color value from light side (but not from highlight) of the sphere and paste in cameras custom WB.
