Once i start designing, how do i change the global units from feet/inches to meters/mm?

window->model info->units

Also, you can choose a metric template OR (after having made any changes in an empty model like styles, units, precision, snapping or even layers and scenes), you can save this as a custom template (File > Save as template) and use it for any new model you start (Window > Preferences > Templates).
