Hi solo,

V-Ray will automatically use all the cards(GPUs) available.
In case you need to limit the utilization you can use the following interface:

Extensions > V-Ray > Tools > (GPU Device Selection)
It lets you un-check any card/s that you don't want used for rendering.

V-Ray 3 can use CPU or GPU depending on the rendering mode selected but not both at the same time (there is no hybrid functionality).
Multiple cards are supported and can be used either on one computer or over the network with the help of V-Ray Swarm.
