Why is it that, althoug diamonds are amazingly precious, they throw half of it (on avrage) away when they cut it?

Waste not, want not. All the offcuts get used for smaller stones (like in watches etc.) and the really small stuff gets used to tip drill bits and other cutting/abrasive tools.
