I have a 3D shape similar to a spoon's ovate shape; it has a mild but extant variable thickness. I made my shape by using curviloft's profiles.
Now here is the problem: how would I modify this 3D shape? Do I have to go back and modify the profiles thus taking a lot of time or is there an easier way?

I think one can say... depends! It really depends on what changes you are talking about and what your mesh looks like now. You can free-form model some detail or you can scale parts or whole. Look at Vertex Tools. But often it is actually faster to go back to get a new smooth mesh based on your outlines, especially for the sort of shape you describe.
