I'm modeling a house and want to show the client what it would look like with shingles compared to lap siding. Can I do this using the same layout and sketchup files?

In your SU model, group all plains with the selected material > group and place to a layer > copy group and place to a new layer > re-texture the plains in this group with the alternative texture and then use scene / layer control to vary the view in layout.
