Just returning to SU could use a bit of advice/ help

Hi,
I hope you don't mind me asking. I am going to be doing an SU of a garden which has trees, grass, road, buildings, a dock and sea. I understand there have been new advances in SU I am using 7 and I was wondering if anyone could advise me on the best methods for creating the models required.
I have some idea but as I am not up to speed I would welcome your more experienced input.Thank you in advance.

What SU 7 are you using? Developers try to improve speed with every new release but there was a considerable speed improvement from 7.0 to 7.1. What makes you not upgrade to the latest version?
