Is the curved surface already part of a larger model? This could affect what steps to take.
Is it terrain, or a building? If terrain, perhaps the Sandbox tools?
Perhaps post an image of what you are trying to do?

I take the slow, deliberate approach in my aimless wandering.

Note that a curved surface will always exist out of a grid or other kinds of geometric subdivisions. To see them, turn on Hidden Geometry in your View menu.
If you want it to be more detailed, use the sandbox tools. The 'add detail' button is always nice. But if you need a specific grid, use the 'from scratch' button. It looks like a grid. This can be projected upon a curved surface with the Drape tool.

If you don't see the Sandbox toolbar listed in View > Toolbars, you may need to turn it on in your preferences.
