Hi Geoffrey,
First of all (if you haven't done so far) activate the Sandbox tools at Sketchup > Application Preferences > Extensions Manager. You may then even activate the Sandbox tools in the Tool palette.
(Sigh... I'm on a PC and this is so different).
Anyway, the rest should be the same:
- choose the Sandbox from scratch tool
and draw a TIN (triangulated irregular network). - then use the Smoove tool to create vertical irregularities on your terrain.
- choose the Sandbox from scratch tool

There is a little tutorial on terrain at 3D Warehouse http://sketchup.google.com/3dwarehouse/details?mid=64102e4f2ef3e0166ff2743b86cddd2f

Tip: If the "start from scratch" Sandbox tool doesn't draw anything, try typing a lower number for the divisions.
