Hi !
The best to have your model watertight is to start modeling it exactly for this purpose .
Most of my models are kind of solid, with few more tweaks. As you said, when lot polys involved, making it watertight is a pain or even impossible .I recently modeled two trains and some traintracks and pillars for 3d printing, but knowing this I modeled them watertight from the first ! Also need to keep in mind, the scale, small details etc !

You will never be able to reduce the subdivided geometry back to its initial form, unfortunately ,but you can undo and make changes until the form is as you want.

Stunning model of that BMW, great work... an ultra-high-poly model xD What plugin are you using to multiply polygons that way ? It would help a lot to improve my Stingray model so I won't be needed to multiply them manually 'cause it's a lot of work.
