It's not a perfect science, here is a basic idea of how I rig, after I rigged to the pose I want I use the smooth brush to relax the mesh at joints.

I've watched the video around 7-8 times..
Really helpful.. What was even more fascinating for me to see was the no. of icons in the toolbars, plugins etc installed... mesmerizing stuff..

Okay, here is a very quick, rough idea. My Camtasia studio stopped working (opened a ticket with Techsmith) so I used some free app that really is crappy, please excuse the bottom screen cut-off.
I used the knife tool, smooth tool, inflate and sculpt tools. basic idea of how I work.
